Ingredients
  

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ¾ cup unsalted butter softened
  • ¾ cup packed brown sugar
  • 1 large egg
  • ½ cup unsulphured molasses
  • 1 teaspoon pure vanilla extract

Method
 

  1. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  2. In a large mixing bowl, beat the softened butter and brown sugar until light and fluffy.
  3. Add the egg, molasses, and vanilla extract, then mix until well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  5. Divide the dough into two portions, wrap each in plastic wrap, and chill in the refrigerator for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out the chilled dough to about ¼-inch thickness.
  8. Cut out your favorite holiday shapes using cookie cutters.
  9. Arrange the cookies about 2 inches apart on the prepared baking sheets.
  10. Bake for 8–10 minutes, or until the edges are set and the centers are still slightly soft.
  11. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  12. Decorate with royal icing or festive sprinkles if desired.

Notes

  • Chill the dough before rolling to make it easier to handle and help the cookies keep their shape.
  • Spoon and level the flour instead of scooping directly from the bag to avoid dry cookies.
  • Don't overbake, the cookies will continue to firm up as they cool.
  • Allow the cookies to cool completely before decorating.
  • Store cooled cookies in an airtight container for up to 1 week.
