  • 2 cups cottage cheese
  • 3 garlic cloves
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 12 ounces cooked pasta
  • Fresh parsley for garnish

Method
 

  1. Blend the cottage cheese, garlic, Parmesan, olive oil, salt, pepper, and Italian seasoning until completely smooth.
  2. Pour the sauce into a saucepan and warm gently over low heat.
  3. Add a splash of pasta water if a thinner consistency is desired.
  4. Toss the sauce with the cooked pasta until evenly coated.
  5. Garnish with parsley and extra Parmesan before serving.

Notes

Blend until completely smooth for the creamiest sauce.
Reserve some pasta water to adjust the consistency if needed.
