Method
- Slice the chicken into thin strips and prepare all the vegetables.
- In a small bowl, whisk together the soy sauce, honey, sesame oil, cornflour, water, and black pepper.
- Heat the vegetable oil in a large wok or frying pan over medium-high heat.
- Cook the chicken for 5–6 minutes until lightly browned. Remove and set aside.
- Add the onion and cook for 1 minute. Stir in the garlic and ginger for 30 seconds.
- Add the broccoli and carrots. Cook for 2 minutes.
- Stir in the mushrooms and bell pepper, then cook for another 3–4 minutes.
- Return the chicken to the pan.
- Pour in the prepared sauce and stir until everything is evenly coated and the sauce thickens.
- Garnish with chopped spring onions and sesame seeds before serving.
Notes
Prepare all your ingredients before cooking, as stir-frying happens quickly.
Avoid overcrowding the pan to help the chicken brown properly.
Feel free to swap in vegetables such as green beans, baby corn, snap peas, or courgettes.
For a spicy version, add chilli flakes or fresh chilli to the sauce.
