Easy Chicken and Vegetable Stir-Fry

Ingredients
  

  • For the Stir-Fry
  • 2 boneless skinless chicken breasts, sliced into thin strips
  • 1 tablespoon vegetable oil
  • 1 small onion sliced
  • 2 garlic cloves minced
  • 1 teaspoon fresh ginger grated
  • 1 small broccoli cut into florets
  • 1 large carrot thinly sliced
  • 1 red bell pepper sliced
  • 150 g mushrooms sliced
  • 2 spring onions chopped (for garnish)
  • Sesame seeds optional
  • For the Sauce
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1 tablespoon cornflour
  • ¼ cup water
  • ½ teaspoon black pepper

Method
 

  1. Slice the chicken into thin strips and prepare all the vegetables.
  2. In a small bowl, whisk together the soy sauce, honey, sesame oil, cornflour, water, and black pepper.
  3. Heat the vegetable oil in a large wok or frying pan over medium-high heat.
  4. Cook the chicken for 5–6 minutes until lightly browned. Remove and set aside.
  5. Add the onion and cook for 1 minute. Stir in the garlic and ginger for 30 seconds.
  6. Add the broccoli and carrots. Cook for 2 minutes.
  7. Stir in the mushrooms and bell pepper, then cook for another 3–4 minutes.
  8. Return the chicken to the pan.
  9. Pour in the prepared sauce and stir until everything is evenly coated and the sauce thickens.
  10. Garnish with chopped spring onions and sesame seeds before serving.

Notes

Prepare all your ingredients before cooking, as stir-frying happens quickly.
Avoid overcrowding the pan to help the chicken brown properly.
Feel free to swap in vegetables such as green beans, baby corn, snap peas, or courgettes.
For a spicy version, add chilli flakes or fresh chilli to the sauce.
