Ingredients
  

  • 2 large eggs
  • 1 tablespoon milk optional, for a fluffier omelet
  • ½ red bell pepper diced
  • A handful of fresh spinach roughly chopped
  • 2 tablespoons onion finely chopped
  • 1 teaspoon olive oil or butter
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 slices of wholemeal bread
  • Butter mashed avocado, or cream cheese for serving (optional)

  • 1 Non-stick frying pan
  • 1 Mixing bowl
  • 1 Whisk or fork
  • 1 Spatula
  • 1 Knife and chopping board
  • 1 Toaster or grill

Method
 

  1. Crack the eggs into a bowl, add the milk if using, then season with salt and black pepper. Whisk until smooth and slightly frothy.
  2. Heat the olive oil or butter in a non-stick frying pan over medium heat.
  3. Add the onion and bell pepper, then cook for 2–3 minutes until they begin to soften.
  4. Stir in the spinach and cook for about 30 seconds, just until wilted.
  5. Pour the whisked eggs over the vegetables, tilting the pan so the mixture spreads evenly.
  6. Cook gently until the eggs are almost set, then carefully fold one side of the omelet over the other.
  7. Continue cooking for another minute, then slide the omelet onto a serving plate.
  8. Toast the bread until golden and serve immediately with the warm vegetable omelet.

Notes

This vegetable omelet is best enjoyed fresh, but it can be refrigerated for up to 2 days. Pair it with wholemeal toast, fresh fruit, or a hot cup of tea for a balanced and satisfying breakfast.
Whisk the eggs well to create a lighter, fluffier omelet. Cook the vegetables before adding the eggs to prevent excess moisture. Keep the heat at medium so the eggs cook gently without becoming rubbery. Use whatever vegetables you already have in the refrigerator to reduce food waste.
